* 6 shallots

* 1 tablespoon coconut oil

* 1/2 cup coconut milk

* 1/4 cup water

* Salt to taste


Directions:


1. Heat the coconut oil in a pan over medium heat. Add the shallots, garlic, and ginger, and sauté until lightly browned.


2. Add the beef to the pan and season with the coriander, fennel, and black pepper. Cook for about 5 minutes, stirring occasionally to ensure even cooking.


3. Add the coconut milk and water to the pan. Bring the mixture to a boil, reduce the heat to medium-low, and simmer for 1.5 to 2 hours until the meat is tender.


4. Stir the mixture occasionally to ensure even cooking. Also add more water if necessary to prevent the mixture from drying out.


5. When the meat is tender, turn off the heat and let the rendang cool slightly before serving. Serve hot with steamed rice and a side of pickles or sambal.
