Ingredients:

* 2 eggs

Instructions:

1. Rinse the rice in a colander with cold water and drain well. Transfer the rice to a large pot and add 3 cups of water. Bring the pot to a boil, then reduce the heat and simmer, covered, for 18 to 20 minutes or until the rice is tender. Remove from heat and let the rice stand, covered, for 10 minutes.


2. Meanwhile, heat 1 tablespoon of oil in a skillet over medium heat. Add the garlic and onion and cook, stirring often, until lightly browned, about 3 to 5 minutes. Set aside.


3. Heat the remaining 2 tablespoons of oil in a large non-stick skillet or wok over medium-high heat.
